MEMORIAL DAY, I GOT THIS!

You or someone you know wants good but healthy Memorial Day food, I know this. Your either toasting, hosting or helping to cater a gathering somewhere. Fret no more y’all; I’m here to save the day, hours or minutes you have left to prepare and deliver; fretting is the farthest thing from my mind.

First up, cocktails! Every good party in my book deserves a really good cocktail, ummmm….yes thank you! Who says it has to be toxic and unhealthy? Not this kick butt vegan.  Although alcohol consumption should definitely be kept on the “minimum” to obtain optimal health status, I’m a total believer that a healthy dose here and there can cure a multitude of ailments. Amen!

Here’s a very refreshing and pretty healthy (relatively speaking) concoction that you can feel good about swallowing down a few benefits while also delighting in the sinful indulgence. Give this a shake, stir or however you like it.

Recipe: Cornelia Guest

Spiked Strawberry Lemonade

Ingredients

2 cups water
1/2 cup agave (more to taste)
1 cup fresh lemon juice (approximately 6 lemons)
1 lemon, sliced, for garnish
1 pound cleaned strawberries
16 ounces seltzer, chilled
1 cup citrus flavored vodka

Instructions

In a medium saucepan, bring 2 cups water and agave to boil over medium-high heat. Rehttp://katmendenhall.com/?p=774&preview=trueduce to a simmer and cook, stirring occasionally until combined, about 1 minute. Transfer to pitcher and refrigerate for 45 minutes. Add lemon juice and vodka and stir. In a blender, puree strawberries until smooth and pour through mesh sieve into pitcher with lemon syrup, pressing on solids. Stir well to combine. To serve, stir in seltzer and divide among ice-filled glasses. Top with lemon slices.
