HOLY MOLY GOALS AND GUACAMOLE

I’m so glad the first week of the New Year has come and is about over. Last month about zapped the life out of me. A big birthday (http://katmendenhall.com/throwing-this-tbt-way-back-today/), a loss in our family that brought sadness and unexpected travel (http://katmendenhall.com/recipe/remembering-a-life-in-apples/), Christmas shopping and prepping, the addition of a new kitty, a trip out of town with my parents, a thorough cleaning out at my condo. I definitely felt it this week, a bit mentally exhausted and physically fatigued but eager to start the New Year gung-ho. Somehow I managed to survive and in the process no one was shot, little wine was consumed, and I managed to stick to my work, fitness and eating goals. I’m still struggling to get back at 100% but I feel good about what I accomplished this week and I hope you feel the same.

What really helps me to get back on track when life becomes a bit disruptive is planning and setting goals. I’m an old school paper and pen gal who loves a classic Composition Notebook that I use to write everything down. I’m also a visual person so it helps me once I think it to write it. I feel I’m moving forward when I’m able to physically check things off the list. I also like being able to go back thru the notebooks for previous written memos, thoughts, information, etc. If I do this on my computer it seems to disappear amongst all the other info that I keep stored in that black hole.

Speaking of goals, we all make them this time of the year. Call it what you want, goals, resolutions, intentions…it’s all the same in my book. Setting goals is important for many reasons and I’m a bit of a geek at it. Having something to work towards, to look forward to keeps us focused on the things we want or maybe need to achieve. There are really no rules to goals. They can be small or big and can pertain to anything such as your career, your relationships, your mind or physical body. Or maybe just something you want to achieve for the heck of it like, skydiving! For the record, that’s not a goal I’d EVER make.

Depending on the person or goal, it may be shared or kept private. Typically I don’t talk about what goals I set for the New Year, I’m pretty private but today I will share one cause I think it’s a pretty big thing and it affects YOU! Drum roll…in addition to expanding and making some pretty cool changes with my product line I’m going to offer a FREE monthly newsletter! It's easy to overcomplicate things and add to many ingredients to certain dishes. Like pizza, pasta, and guacamole. I love the fresh flavor and creaminess of a perfect ripe avocado. Why spoil it by adding too many fussy ingredients? This is as straightforward delicious as you can get and it if there's leftovers it makes it more versatile too!

  1. Cut both avocados in half and scoop out the flesh with a spoon into a bowl, ditch the seed. Cut the lime in half and squeeze each half into the bowl with the avocado. Add the chopped cilantro, garlic powder and s&p. Use the back of a fork and smash the avocado in with the rest of the ingredients leaving it as chunky or smooth as you like. Make sure all ingredients are blended well. Serve immediately. Cover any leftover in a bowl with plastic wrapped securely pressed down on top of the guac so no air is able to reach it and turn it brown. Put it on everything!
  2. In this picture I had some leftover green onions I threw on top the guac. Use your own creativity and top away!
