SMOOTHIE ON THE GO-GO

This is me (well my hand) in my car drinking a smoothie on the go (see what I did there).

Oh! Howdy y’all! It’s a been a stinkin moment since I’ve wrote a recipe post. Yet don’t get too overly excited cause this is a short and sweet one. I’ll come back soon and let you know why I dropped off for a few months, but until then I wanted to share this refreshing, flavorful, and super health boosting smoothie with y’all.

Now I know there’s one million smoothie recipes out there, in fact whole cook books are dedicated to only smoothies. You probably have your favorite and go to’s already. I mean what hasn’t been said about smoothies yet is what you’re probably thinking. Or better yet you’ve moved on to the smoothie bowl, the new rage. So why now, why am I bringing you a smoothie now…after all this time?

Well I get asked a lot by clients, subscribers, cooking demos, etc. what I typically eat. I shy away from telling people not because I’m embarrassed (have you seen my Instagram? https://www.instagram.com/katmossmendenhall/), but because what and how I eat may not be the best for someone else. I will admit that even though I’m a strict vegan, there’s certainly ways I could eat healthier. Balance is the key for me and again my balance may not be yours.

With the early onset of summer heat here in Texas and a desire to up my nutritional game, I’ve added smoothies back into my daily eating plan (bowls I’m not ready for you yet). I’m sharing a simple recipe I’ve been making that keeps me fueled and satisfied until my next healthy meal. Give it a try!

This pre or post workout, or anytime smoothie is light and refreshing. You can up the protein by adding a tablespoon of your favorite nut butter. Change up the superfoods based on your on needs.

  1. Place all ingredients in a high speed bender in order listed. Blend well until smooth and creamy. Pour into a glass jar and enjoy!
