As a Vegan Lifestyle Coach & Educator (VLCE) I am certified to coach, counsel, educate and guide individuals and groups interested in transitioning & adopting a vegan lifestyle. I can help you incorporate more plant based food in your kitchen, plan & prepare meals, teach you how to shop and read labels, and eat healthfully, even on a budget. Additionally, I can help with social and emotional issues surrounding this lifestyle change.
My services include the following:
-Consultation of current lifestyle, eating habits and activity level
-Coaching based off of individual needs, topics, and condition
-Removing animal products and by-products by substituting nutritious plant- based ingredient
-How to shop and choose organic, local if possible, whole plant-based
food on any budget
-Preparing no fuss, no frills, but fast plant based meals
-How to maintain a healthy home and cruelty-free wardrobe
-Maintaining a whole foods diet while eating out and traveling
-Support offered on a weekly, bi-monthly or monthly basis
I am qualified to help you incorporate more plant based food in to your kitchen, plan and prepare meals, teach you how to shop and read labels, and eat healthfully (even on a budget!) Also, I am prepared to help you with the social and emotional issues surrounding this lifestyle change. I am available to speak at special events upon request,
as well as fundraisers.
CULINARY NUTRITION EXPERT
As a Culinary Nutrition Expert (CNE), I’m certified to teach individuals, groups and corporations on how to create a nutritious eating plan utilizing whole plant-based ingredients that are chosen consciously, organically, and locally when possible. I teach clients how to use these ingredients in simple recipes that are balanced, nutritious, healing, and most importantly filling.
My Culinary Nutrition Expertise Includes:
-A thorough understanding of the impact food choices have on health
and specific health conditions
-The development of meal plans in accordance with various dietary restrictions
-Ingredient Exploration: I select specific healing ingredients, experiment with a variety of applications,
and then create recipes that exploit health promoting benefits
-Knowledge in and experience with the local food community
My services include the following:
-How to eat for vibrant health by changing current habits
-How to balance blood sugar and kick cravings
-Increase energy, look younger, and have healthier hair, skin, and nails
-Ditching the plastic and processed food

Although not a clinical nutritionist, Kat Mendenhall is a Vegan Lifestyle Coach and Educator certified by the Main Street Vegan Academy. She is a culinary nutritionist certified by the Academy of Culinary Nutrition and is certified in plant-based nutrition by the T. Colin Campbell Foundation at Cornell University.
