Preheat oven to 400 degrees. Wisk together the apple cider vinegar and soy milk in a small bowl, set aside. In another bowl combine the cornmeal, flour, baking soda, salt, and sugar and wisk till combined. Stir the oil into the soy and vinegar bowl and then pour the liquid into the bowl of dry ingredients. Mix until all the ingredients are well blended.
Pour the mixture into a 8×8 square baking pan or round pan and bake for 40 minutes. The top should be slightly brown and golden
